咖啡已經逐漸成為現代人生活的必需品，無論是作為提神醒腦的早茶，還是午後休憩的陪伴，它都暗自記錄著城市角落裡流淌著的愜意時光，與時尚和浪漫聯繫在一起，成為了一種風靡全球的飲食文化。

Coffee has been a necessity for modern people no matter for refreshing in the morning or as a company in the afternoon, which secretly recording the leisure time in every corner of a city. Coffee subtly reminds people of fashion, and has been a worldwide food culture.

如今，咖啡館在中國已是遍地開花，但就算沒有咖啡機和虹吸壺，一個人在家也能做出一杯香濃醇厚的咖啡來。如果你的生活被鎖在了兩點一線中，有如速溶咖啡一般索然無趣，那麼是時候來一杯手沖咖啡了，在這個潮濕悶熱的午後，喚醒這份一個人的精緻時光。

Nowadays, cafe shops have been in blossom on Chinese land. Without coffee machines and vacuum brewers one can make a cup of pure and fragrant coffee. If your life is locked in the routine, it will be as dull as a cup of instant coffee. Then it』s time for you to get a hand-pour to awake the delicate time of being alone, in such a damp afternoon.

這位生活在北京的英國小伙，就是手沖咖啡的忠實粉絲之一。Daniel Rothwell，來自英國埃塞克斯，在北京已經生活了3年。就是在這裡，他從一個繪畫和音樂愛好者變身為手沖咖啡迷，並把三種體驗意外地結合在了一起。

Daniel Rothwell, a British guy living in Beijing, who is one of the huge fans of hand-pour coffee. He comes from Essex and has been living in Beijing for 3 years, and it is in Beijing that he becomes a hand-pour lover from the drawing and music amateur andunexpectedly combined these three things into a great integrity

在經營咖啡館的同時，Daniel將自己對於咖啡的理解與感觸透過畫筆，分享給更多人，並為中國兒童開設了特色音樂課程。或許正是因為這些，才讓Daniel的咖啡如此與眾不同。如今的Daniel一邊繼續沖泡並感受咖啡，一邊用自己的方式把在中國生活的喜悅傳遞下去。他樂於讓人們品嘗咖啡後，在杯子上寫下喝咖啡時的感受，或許只是一些隻言片語，卻能讓所有人在這個偌大的城市裡找到一種獨特的共鳴。

When running the cafe, Daniel expresses his understanding toward coffee in the way of drawing and share it with more people, and started special music courses for Chinese children. It is because of all these he has done that makes his coffee so different. Now, he spreads his own joy of life at the same time of making coffee. He looks forward to people』s feeling after drinking his coffee, even a few words are enough to resonate through such a big city.

Daniel說：「北京是一個讓人收穫驚喜的地方，但如果讓我在音樂、咖啡和繪畫中選擇一個，我想我是辦不到的。」

手沖咖啡又稱為過濾式咖啡，沒有複雜的器材，只需一把細嘴壺、一張濾紙和一個滴濾杯，通過控制不同的水溫、水流速、過濾時間等，對咖啡的口感和風味進行調整。在Daniel看來，手沖咖啡雖然看似簡單，卻蘊藏著無限的可能，甚至是同一個人每次沖泡出的味道也不盡相同。如何讓不同品種和研磨程度的咖啡始終呈現出酸、甘、澀、醇的完美平衡，是需要衝泡者不斷地嘗試與摸索。這也正是這杯「手作」咖啡的真正樂趣所在。

Hand-pour coffee is also called drip coffee, whose equipment is really simple which only needs a sticky kettle, a piece of filter paper, and a filter cup. It tastes different when using different temperatures and speeds of water and filter of time.Daniel thinks that there are endless possibilities in this simple process, or even the same person cannot make the same flavor each time. And how to make it stay at a perfect balance point among sourness, sweetness, bitterness and pureness still needs a lot of trials and explorations, and this is where the real joy of hand-pour coffee lies.

人生是短暫的，就像一杯手沖咖啡一樣，不同的經歷與體驗，會讓你呈現出不同的面貌與氣質。既然如此，何不在有生之年，去那些想去的地方，做自己想做的事，讓人生這杯咖啡，也能酸苦適當，濃淡可調，沖泡出屬於自己真實又獨特的味道。

Life is short, which is like a cup of hand-pour coffee that different experiences shape you into different results. So why not go to the places that you want to go and do the things you really want to do? Just keep this cup of life in a balance between sourness and sweetness, between thickness and lightness, and make it real and different.
