1.take King salmon to cut one portion,clean the skin,add sea salt、black pepper、olive oil、garlic、shallot、thyme、parsley、tarragon、butter 、lemon juice & white wine to vacuum,then use sous-vide machinen to slow cook.

2.cut fennel to slice,use butter、shallot、bay leaf & white wine to sautéed & reduce,then add ink sauce、sea salt、black pepper、black truffle juice & white truffle paste to blend.

3.use cauliflower romanesco、butter、olive oil、thyme、bay leaf、sea salt & black pepper to sautéed & blend.

4.use butter to sautéed mushroom、cauliflower romanesco & baby cabbage.

5.put some flower、herb sprout、fennel slices、sea salt & olive oil.
