關中煎餅是陝西省一款歷史悠久的地方傳統風味食品,其特點是鬆軟滑爽,面菜合食,香味宜人。

關中人善做煎餅,調劑初春、冬日之飯食單調。關中農村待客,特別是丈母娘招待女婿和遠方來的貴客,煎餅更是必不可少的食品。

製作方法:

Cooking Techniques

關中農村傳統的攤煎餅是用農家土灶最為適宜,最好是燒當年的新麥秸。用上好關中產小麥面,加水調成糊狀,少許精鹽、雞蛋入麵糊中待用。城市人只好用電餅鐺了,倒也簡單方便。三五分鐘,煎餅就做好了。

The traditional cooking method is to use the farmhouse stove with burning the new wheat straw of the year. Use the superior wheat flour produced in Guanzhong areas. Add water, a little salt and eggs to make a batter for use. City people have to use electric cakes, but it is also simple and convenient. Within three or five minutes, the pancakes are ready.

煎餅配菜多有醋溜洋芋絲、醋溜綠豆芽、雞蛋炒青辣子、豇豆炒肉末等.

The dishes for pancake are mostly Chili andSourPotato, Sauteed Green Bean Sprouts with Sour Sauce, Fried Egg with Green Chilli, Fried Cowpea with Minced Meat, and so on.

調料:

油煎蒜泥、油潑辣子,醬油、香醋、鹽等。

Fried garlic in oil, Oil chili sauce, Soy sauce, Balsamic vinegar, Salt, etc.

吃法:

Suggested Use:

將配菜捲入煎餅中,沾著調料汁食用,或者簡單一些,蘸上油潑辣子蒜水,亦十分有味。還有的人乾脆什麼也不要,拿起便吃,方能品出濃厚傳統關中家常飯風味,倒也突出了煎餅的本來味道。

Wrap the side dish with pancake. It is also good to eat it either with sauce or simply with oil chilli garlic sauce. Others prefer to directly eat with nothing, which is the approach of tasting strong traditional family meals flavor, meanwhile highlights the original taste of pancakes of Guanzhong.
