White tea keeps its natural appearance from beginning to end.

Without too many complicated processes, it only needs the most natural sunshine withering.So how to brew such sunshine tea with sunshine smell?

Appliances Preparing

Glass cup: White tea is usually brewed with transparent glass or transparent glass lidded-cup. You can enjoy the show of white tea in the water.

Boiling water at 80 - 85 C: White tea is tender and leaves are thinner, so the water temperature should not be too high when brewing, and it is generally appropriate to control it at 80 - 85°C.

Steps for making tea

1.Warm your tea cup.Pour a little boiling water into the cup. Hold the cup in both hands. Turn around and pour out the water. The aim is to keep the cup at a certain temperature.

2.Infiltrate the tea.Use a teaspoon to take a little white tea and place it in the tea towel.Then put about 3 grams of white tea into each cup. Lift the kettle and flush water into the cup along the wall. The amount of water is about a quarter of that of the cup. The purpose is to soak the tea leaves and make them unfold initially.

3. Release the tea fragrance.This is more critical. Hold the bottom of the cup with your left hand and hold the cup with your right hand. Turn the cup clockwise and gently for about half a minute to make the tea further absorb water and give full play to its aroma.

4.Circularwaterinjection.When brewing, you can enjoy the tea rotating up and down in the cup by using the method of circular water injection. It is advisable to control the amount of water added to the cup by about two-thirds. After brewing, let it stand for 2 minutes.

5.Taste tea.Firstly smell the fragrance, then look at the color of the soup and floating buds ,which are transparent like orchid in the glass .If you take a look at the infused leaves, you can see the graceful posture of brewed tea in the drifting tray. Then sip , and the after taste is sweet.

6.The secret of making white tea: Every time tea soup is served out, it should not be emptied completely. About one third of the bottom of the soup should be left. In this way, after renewing the fresh water, the tea soup can continue its original flavor.

Different types of white tea have different brewing methods.

1. Silver Needle Pekoe: Tea buds are tender,so the water temperature should not be too high. 90 degrees is highly recommended. When brewing, the hot water should not rush directly into the tea bud, but rush along the wall of the cup (or pot), which has two advantages: it will not damage the taste of the tea bud, nor make the tea soup turbid, nor affect the aesthetic feeling of its soup color.

2.White Peony Tea. The White Peony Tea is a bud with two leaves.If the water temperature is too low, it is hard to express the original taste of the tea.If the water temperature is too high, it will hurt the tea bud. The brewing temperature of White Peony tea should be controlled between 90 to 100 degrees.

3. Gong Mei or Shou Mei. The shape of Gong Mei and Shou Mei is extensive and coarse, and the tea soup is deep red and beautiful with excellent effects to human body. Water temperature can be more than 100 °C when brewing. It can be soaked for a longer time, so the tea taste could be fully liberated.

4. Brewing method of new technology white tea. New technology white tea is a novice in the white tea family. Because of its special technology, its flavor is mellow and sweet, which is similar to the "fragrance" of Oolong in northern Fujian. Therefore, it is appropriate to brew the tea by 「Kung Fu 」 way.

5.The method of making old tea cakes. Old tea cakes are compacted and have been stored for a long time. Only with the water temperature above 100 degrees you can make them show their true qualities. Boiling them in a pot works better.
